Armenian-Style Broth Fondue

A bold and aromatic fondue featuring a juicy, Armenian-style broth, perfect for dipping grilled meats, summer vegetables, and warm pita bread during a festive gathering with friends or family.

  • Broth Ingredients

    • 5 cups low-sodium or homemade beef broth
    • 1 small onion, finely chopped
    • 1 tbsp olive oil
    • 3 cloves garlic, minced
    • 1 tsp sumac
    • 1 tsp paprika
    • 1 tsp dried mint
    • 1 bay leaf
    • ¼ tsp Aleppo pepper
    • Salt and pepper to taste
    • 1 tbsp fresh lemon juice (or more, to taste)
    • 1 tbsp pomegranate molasses

    • Sliced grilled chicken or chicken skewers
    • Grilled lamb skewers
    • Sliced grilled beef (e.g., ribeye)
    • Sliced grilled zucchini
    • Sliced grilled eggplant
    • Sliced grilled bell peppers
    • Fresh cherry tomatoes
    • Fresh pita bread
    • Grilled or roasted potatoes seasoned with garlic, salt, and pepper
  • Preparation

    1. In a medium saucepan, heat the olive oil over medium heat.
    2. Add the finely chopped onion and sauté for 3–4 minutes until soft and translucent.
    3. Stir in the minced garlic and cook for another minute, until fragrant.
    4. Add the sumac, paprika, dried mint, Aleppo pepper, and bay leaf.
    5. Pour in the beef broth and stir well.
    6. Bring the mixture to a gentle boil, then reduce the heat and let it simmer uncovered for 20–30 minutes.
    7. During the last 5 minutes of cooking, add the fresh lemon juice and pomegranate molasses.
    8. Taste and adjust seasoning with salt and pepper to your liking.
    9. Transfer the broth to your Fondussimo pot, keeping it at a medium-low heat.

    Tip

    Strain the broth to remove solids for a clear and flavorful base.
