An Italian dish reminiscent of an omelette or quiche without a crust, frittata is an easy recipe to execute. Our "Fondussimo" version lets you prepare it at the campsite (as long as you have access to electricity!) or cottage without messing up a lot of dishes.

We've opted for a combination of ingredients that's sure to please the whole family, but you can modify the fillings to your liking for a vegetarian or seafood version, why not? You can also incorporate pre-cooked pasta or your leftover toppings from a fondue dinner the night before. Serve your frittata with the same sauce, just to give it that extra punch of flavor! Just remember to modify the spices added to the egg mixture accordingly...

  • Ingredients

    8 large eggs

    1/3 cup milk

    1 cup grated sharp Cheddar cheese

    2 teaspoons vegetable oil

    Flesh of 1 large sausage

    1 cup raw broccoli florets

    ¼ teaspoon cumin powder

    1/8 to ¼ teaspoon salt (to taste)

    Ground pepper (to taste)

    5 baby tomatoes, halved (optional)

  • Preparation

    • In a large bowl, whisk together the eggs and milk vigorously with the cumin and salt until small bubbles form on the surface, then add the cheese and blend well.
    • Add the cheese and mix well. In the bowl of the Fondussimo, sauté the sausage meat in the oil with a wooden spoon on setting 3 for a few minutes, holding the handles and taking care not to touch the hot metal.
    • Add the broccoli florets and cook for a further 2-3 minutes.
    • Spread the mixture over the bottom of the Fondussimo bowl, then gently pour in the egg mixture.
    • Place the lid on and cook for 25 minutes on setting 1, or until the omelette is cooked through to the center.
    • Garnish with baby tomatoes and freshly ground pepper, and serve with toasted or fire-roasted English muffins.

    A few tips

    • To keep your frittata warm during the meal, at brunch for example, it's perfectly possible to present it directly in the Fondussimo, keeping the temperature control on the lowest setting.     • Have you decided to modify the recipe and choose your own toppings? Decide which should be sautéed in the Fondussimo bowl before adding the egg mixture, and which can simply be placed on top of the frittata. Smoked salmon, for example, is best added at the very end.
