Anyone who doesn't like waffles, raise your hand! Anyone? That's what we thought! This gourmet waffle recipe is inspired by our succulent Nanaimo Fondue. To be enjoyed without moderation!
Ingredients
250 ml (1 cup) Nanaimo Fondue (or another chocolate fondue)
8 pitted cherries
1 quartered peach
1 sliced starfruit
For the waffles:
250 ml (1 cup) all-purpose flour
45 ml (3 tablespoons) cornstarch
5 ml (1 teaspoon) baking powder
30 ml (2 tablespoons) maple syrup
30 ml (2 tablespoons) sugar
2 eggs
60 ml (1/4 cup) canola oil
5 ml (1 teaspoon) vanilla extract
250 ml (1 cup) milk
Preparation
Preheat a waffle iron according to the manufacturer's instructions.
In a large bowl, combine the flour, cornstarch and baking powder.
In another bowl, beat the maple syrup with sugar and eggs for 4 to 5 minutes with an electric mixer, until the mixture whitens and doubles in volume. Gradually whisk in the oil, vanilla and milk.
Gradually add the dry ingredients to the wet ingredients and whisk until a lump-free batter forms.
Spray the waffle irons with cooking spray or brush with oil. Pour about 180 ml (3/4 cup) batter into the waffle iron. Cook for 2 to 3 minutes, until golden and crisp. Set aside on a plate. Repeat with the remaining batter to make four waffles.
