Ingredients
250ml (1 cup) Nanaimo fondue
8 pitted cherries
1 quartered peach
1 sliced starfruit
For the waffles:
250ml (1 cup) all-purpose flour
45ml (3 tbsp. tablespoons) cornstarch
5ml (1 teaspoon) baking powder
30ml (2 tablespoons) maple syrup
30ml (2 tablespoons) sugar
2 eggs
60ml (1/4 cup) canola oil
5ml (1 teaspoon) vanilla extract
250ml (1 cup) milk

Preparation
- Preheat a waffle iron according to the manufacturer's instructions.
- In a large bowl, combine flour, cornstarch and baking powder.
- In another bowl, beat maple syrup with sugar and eggs for 4 to 5 minutes with an electric mixer, until mixture whitens and doubles in volume. Gradually whisk in oil, vanilla and milk.
- Gradually add the dry ingredients to the wet ingredients and whisk until a lump-free batter forms.
- Spray waffle irons with cooking spray or brush with oil. Pour about 180ml (3/4 cup) batter into waffle iron. Cook for 2 to 3 minutes, until golden and crisp. Set aside on a plate. Repeat with remaining batter to make four waffles.
- Reheat fondue in a bain-marie or microwave.
- Garnish waffles with fondue and fruit.
