Where there's a party, there's Nachos! Fondussimo invites you to try the best way to prepare the popular "Queso" style cheese dip. Uno, dos, tres, nacho! Accompanied by tortillas, avocados and jalapeño peppers stuffed to your liking, this devilish recipe will set the mood at your reinvented fondue party. And don't forget the "cerveza"!
Ingredients
When using the Evolution Mini, reduce the amount of ingredients by about one-third.
For the fondue:
375 ml (1 1/2 cups) beer (Corona type)
60 ml (1/4 cup) tequila
15 ml (1 tablespoon) chopped garlic
1 chopped onion
7.5 ml (1/2 tablespoon) chili powder
375 ml (1 1/2 cups) grated Monterey Jack cheese
500 ml (2 cups) grated havarti cheese
500 ml (2 cups) grated sharp yellow cheddar cheese
30 ml (2 tablespoons) cornstarch
250 ml (1 cup) chorizo sausage, diced
30 ml (2 tablespoons) chopped fresh coriander
Pepper to taste
Suggested garnishes:
Cooked and cubed skinless chicken breasts
Cooked and shelled medium shrimp (size 31/40)
Bread stick
Pre-cooked bacon
Yellow corn chips
Mini peppers of various colors
Jalapenos
Mini corn
Cherry tomatoes
Avocado
Preparation
To make this fondue, you must use the corresponding ceramic bowl for your Evolution set. For more details, please consult our FAQ.
In a saucepan, combine beer, tequila, garlic, onion and chili powder. Bring to the boil. If desired, strain through a sieve.
In a bowl, combine cheeses and cornstarch.
Reduce heat to low-medium. Gradually stir in cheese mixture with a wooden spoon, until cheeses are melted. Do not bring to a boil.
Add chorizo and coriander. Taste the fondue, then season with pepper. Taste and adjust seasoning if necessary.
Pour the cheese fondue into the ceramic bowl of the fondue pan.
