Forest Risotto with dried mushrooms

Easier to prepare than you might think, risotto is a gourmet way to enjoy your time outdoors! The version we suggest here is a two-step process: prepare the water-based broth and dehydrated mushrooms in the bowl of your Fondussimo, then cook the risotto itself. By gradually adding the hot broth and stirring throughout the cooking process, you'll achieve the creamy texture you're looking for! Adding butter and cheese at the very end won't spoil your pleasure!

  • Ingredients

    1 ½ cups or 3 large handfuls of dehydrated mushrooms

    2 liters of water

    3 to 4 tablespoons of oil

    1 onion, finely chopped

    3 cloves of garlic, finely chopped

    3 sprigs of thyme, leaves thinned

    1 ¼ cup of Arborio rice

    1cup of white wine

    3 tablespoons of butter (optional)

    50 grams of grated Parmesan cheese or ½ cup of nutritional yeast

    Salt and pepper, generously

  • Preparation

    • Wash and rinse the mushrooms
    • Place 2 liters of water, 1 ½ tsp. salt and the mushrooms in the bowl of the Fondussimo, bring to the boil, close the appliance and leave to soak for 10 minutes.
    • Using a slotted spoon, scoop out the mushrooms, drain and chop, and pour the soaking liquid into a bowl.
    • Dry the bottom of the Fondussimo bowl, heat the oil, then melt the onions and garlic with the thyme on setting 3 for a few minutes.
    • Add the rice and stir without browning for 2 minutes.
    • Add the mushrooms and cook for a further 2 minutes.
    • Deglaze with white wine and reduce until almost dry.
    • Set temperature control to 1, add ½ cup broth at a time, stirring regularly, and continue until desired consistency is reached (between 18 and 22 minutes.)
    • Close Fondussimo, add butter and Parmesan or nutritional yeast and incorporate well. Season, taste, adjust and serve immediately!

    A few tips

    • Nutritional yeast - not to be confused with nutritional yeast - comes in the form of dehydrated flakes that taste umami like cheese. Rich in vitamin B12, it's a good vegan alternative and, best of all, it's light and stable at room temperature, making it ideal for camping.
    • More and more Quebec companies are offering dehydrated wild mushrooms. Opt for blends with several varieties offering a diverse marriage of textures and flavors!
