Just when you thought you’d seen it all, your Fondussimo will delight your taste buds with our decadent chocolate pudding cake recipe—designed specifically for camping. As long as you have access to electricity to plug in your Fondussimo’s non-stick pot, you’re good to go!

To make your life easier and to minimize clutter, our recipe is vegan; its ingredients require no refrigeration. If the conditions are right, there’s nothing to stop you from pairing it with your favourite ice cream. This recipe is satisfying and delicious. It will definitely become a summer outdoor tradition!

  • Ingredients

    CHOCOLATE SAUCE

    2 cups water

    1 can 400 ml whole coconut milk

    ¼ cup each cocoa, brown sugar, powdered sugar

    ½ tsp. vanilla extract

    ¼ tsp. salt

    CHOCOLATE CAKE

    Dry ingredients

    2 cups flour

    1 cup brown sugar

    ¼ cup cocoa

    2 tsp. baking powder

    ½ tsp. teaspoon salt

    Wet ingredients

    100 grams dark chocolate, either lozenges or finely chopped

    1 400 ml can whole coconut milk

    ¼ cup vegetable oil

    1 flaxseed egg (1 tbsp ground flaxseed + 3 tbsp water, mixed and left to stand for at least 15 minutes)

    1 tsp vanilla essence

  • Preparation

    • (DRY INGREDIENTS) In a Ziploc container, combine the dry ingredients and set aside until ready to prepare the cake.
    • (CHOCOLATE SAUCE) In the bowl of the Fondussimo, combine all the ingredients for the chocolate sauce, bring to the boil, reduce the temperature and mix until the mixture is uniform.
    • Wait a few minutes for the bowl to cool, pour the sauce into a container, then wipe the Fondussimo bowl with a damp cloth, taking care not to burn yourself.
    • (WET INGREDIENTS) In the Fondussimo bowl, melt the chocolate, coconut milk and oil on setting 2, then stir in the "prepared flaxseed egg" and vanilla.
    • Place the lid on the Fondussimo, wait for the bowl to cool and stir in the dry mixture with a wooden spoon, holding the handles to avoid over-mixing. There will be just enough liquid to soak up the dry ingredients.
    • Spread the mixture over the bottom of the Fondussimo bowl, then cover with the cooled chocolate sauce.
    • Place the lid on and bake on setting 1 for at least 1.5 hours, or until the inside of the cake has reached the desired consistency. If necessary, test cooking with a wooden skewer.

    A few tips

    • For an even more decadent version of this pudding cake, top it with your favorite trail mix snack (we chose Krispy Kernels Vitality Mix) and pistachio ice cream or another flavor of your choice.
    • You can use 1 whole egg in place of the flaxseed egg, but it will need to be refrigerated until you're ready to make the cake.
    • To reheat the pudding before serving, use setting 1 for 15-20 minutes.
