From a candlelight dinner to evenings with your BFFs, this fondue has everything to create a moment of pure magic—especially with a nice glass of white wine!

  • Ingredients

    BROTH

    • 3 liters of chicken broth
    • 1 x 750 ml bottle white wine
    • 10 sprigs of thyme
    • 3 garlic cloves
    • ½ a Spanish onion, diced
    • 3 tablespoons of dried Provence herbs
    • 3 tablespoons of old-style mustard
    • ¾ teaspoon of salt
    • ¾ teaspoons of sugar
    • 1 small can of cream of mushroom (optional)

    DIJON SAUCE

    • ½ cup of real mayonnaise
    • 2 teaspoons of Dijon mustard
    • 2 teaspoons of old-style mustard
    • 2 crushed garlic cloves

    GARNISHES

    • Veal or rabbit, thinly sliced Nantes, garden or regular carrots, sliced zucchini rings, onions, mini tomatoes, diced Italian eggplant
    • Green salad and olives as sides
    • Baguette and goat cheese (optional)
  • Preparation

    • Combine all ingredients for the broth in a large pot, bring to a boil and simmer on low heat for at least 15 to 20 minutes to concentrate the flavours.
    • In the meantime, prepare the Dijon sauce, place the garnishes on serving plates and make the side salad (it could simply be leafy greens with your favourite dressing, or even double the amount of Dijon sauce for this purpose).
    • Carefully pour the broth in the Fondussimo and enjoy!

    Quelques astuces

    • Provencal fondue’s delicate broth is best paired with subtle tasting meats, such as veal and rabbit. Less fancy, pork works very well too!
    • If this fondue meal is for a special occasion, don’t skimp on the quality of wine. It makes an entire difference!
