Italian Fondue

Forget about boring pasta meals and indulge in the decadence of a real pasta bar thanks to your Fondussimo! Although recipes often call for cooking pasta in boiling salty water, they’re even more delicious when you use a savory broth. This is why we’ve created a delicious tomato, red wine and herb broth.

Ravioli, tortellini, faggotini: your favorite selection of stuffed pasta will never have been so fun to cook and savour—especially since you’ll be able to twirl or dunk them in our three- cheese rosé dip.

  • Ingredients

    TOMATO AND HERB BROTH

    • 4 x 280 ml cans of tomato soup
    • 1 liter of low sodium chicken broth
    • 2 cups of good quality red wine
    • 2 cups of tomato juice
    • 1 teaspoon of dried oregano, Italian or Provençal blend
    • ¼ teaspoon of sugar, or more to taste
    • ¼ teaspoon of salt, or more to taste
    • Ground pepper

    3 CHEESE ROSÉ DIP WITH BASIL

    • 1/2 a 250 g pack of cream cheese
    • ½ cup of sour cream
    • 45 g of 2 finely grated cheeses of your liking, such as: Asiago, Parmesan, Pecorino, Gran Padano
    • ½ a cup of the hot Tomato and herb broth above
    • Sugar, ground pepper and salt to taste
    • 5-6 fresh basil leaves finely chopped (optional)

    GARNISHES

    To ensure maximum variety, make sure you have 3 packs of freshly stuffed pasta (ex.: three-cheese tortellini, meat and sausage ravioli, spinach faggotini, etc.), 1 sliced bell pepper, 1 finely sliced small onion, 1 container of Paris mushrooms, 1 zucchini in 3 mm slices

  • Preparation

    • Combine all of the broth ingredients in a large pot, bring to a boil, simmer for 5 minutes, taste and add more seasoning, if desired.
    • Soften the cream cheese in the microwave for 45-60 seconds. Add all of the other ingredients and mix well.
    • Prepare and place the garnishes in a serving plate.

    A few tips

    • Place a large plate at the center of the table to layout the ingredients cooked along the way. Everyone will be able to serve themselves as they please.
    • Different varieties of stuffed pasta require different cooking times. Read the packages to note the specific times for each variety of your pasta bar and cook the ones with the same cooking time together.
    • Certain smaller stuffed fresh pasta only require 3 to 4 minutes of cooking time: they are perfect for hurried eaters to begin their meal.
