The Corn Chowder Fondue

This tasty corn-based recipe can easily be prepared year-round, but it’s even better during corn-roast season! It features fresh herbs, bacon and a delicious sour cream sauce, enough to impress anyone you serve it to!

We agree that the “chowder” part of its name is kind of an invitation to enjoy it all bundled up and cozy next to the fireplace, but this recipe is also an excellent choice for a dinner party on the patio or at the campsite during the warmer months!

  • Ingredients

    CREAMY CORN BROTH

    • 2 litres of vegetable stock
    • 3 398 ml cans of creamed corn
    • 2 cups of white wine
    • 500 grams of fresh sliced bacon (keep 4 slices for the sauce)
    • ¼ cup of butter
    • 1 tray of fresh store-bought savory
    • ½ tray of fresh store-bought thyme
    • ½ teaspoon of salt (or more, to taste)
    • A good amount of fresh-ground pepper

    CRISPY BACON SOUR CREAM

    • 1 cup of 14% m.f. sour cream
    • 4 slices of pan-fried bacon, finely chopped
    • 1 tablespoon chopped fresh thyme leaves
    • 2 teaspoons maple syrup
    • Salt and pepper to taste

    SUGGESTED INGREDIENTS

    • Fresh corn slices, ham slices or Mortadella, kale, scallops, Haloumi cheese, crusty sourdough bread, cherry tomatoes
  • Preparation

    • For the broth, combine the 3 cans of creamed corn and 1 litre of vegetable broth in a blender and blend until smooth;
    • If the mixture is not homogeneous, strain it through a fine mesh sieve and place it in a large pot with the other broth ingredients;
    • Bring to a boil, stirring frequently to avoid spillage, then simmer over medium heat for 15 minutes;
    • Meanwhile, prepare the Crispy Bacon Sour Cream by combining the ingredients in a bowl. Chill until ready to serve;
    • Arrange your toppings on serving plates;
    • Sift the broth, pour the required amount into the Fondussimo fondue set using a pitcher and enjoy.

    A few tips

    • To give your broth an even richer corn flavour, add the cores that you’ve saved after taking the kernels off the cob. Not in corn season right now? You can also use frozen corn kernels from home or the store as a dipper.
    • Have some leftover toppings and broth after the meal? Turn them into a delicious soup! If the taste of the broth seems a bit too intense, add water to soften the flavours.
