La Fondue BBQ

For many people, summer is synonymous with BBQ, but at Fondussimo, we absolutely love BBQ Fondue. With its smoky, slightly spicy flavour, our broth recipe provides optimal cooking of a wide selection of proteins, while perfectly enhancing your favourite vegetables.

It’s ideal for your patio, your cottage, or the campsite, and everyone can eat this fondue at their own pace in a friendly setting. Give it a try!

  • Ingredients

    FOR THE BROTH

    • 3 liters of beef broth
    • 700 ml of your favorite store-bought BBQ sauce
    • ¼ cup or more of red wine vinegar
    • 1 diced onion 
    • 5 crushed garlic cloves
    • 3 tablespoons of Bovril liquid concentrate 
    • 3 tablespoons of smoked paprika
    • Salt and freshly-ground pepper, to taste

    MAPLE AND SMOKED PAPRIKA MAYONNAISE

    • 1 cup of mayonnaise
    • 1 tablespoon of smoked paprika, or more to taste
    • 1-2 teaspoons of maple syrup
    • 3 sprigs of fresh thyme, stripped
    • Freshly-ground pepper, to taste

    INGREDIENT SUGGESTIONS

    • Pork, meatballs, sausage pieces, chicken, sweet potato slices, asparagus, broccoli, sliced onion and mushrooms.
  • Preparation

    SAUCE PREPARATION

    • Combine all the ingredients for the sauce, taste, modify to taste, then refrigerate for an hour to allow the flavours to blend.

    BROTH PREPARATION

    • Combine all the ingredients in a large pot, bring to a boil, reduce the heat and simmer for 20 minutes, until the sweet and sour flavour is present.

    MEAL FINALIZATION

    • Arrange the ingredients onto serving plates
    • Sift the broth if desired, then pour the required amount into the Fondussimo using a pitcher. Enjoy.

    A few tips

    • Can’t find smoked paprika for our mayonnaise? A mixture of ½ cup of mayonnaise and ½ cup of your favourite BBQ sauce enhanced with fresh thyme will also provide a very satisfying result!
    • To highlight the presentation of the meatballs and make it easier to serve them, present them on skewers. All you have to do is slide them into your perforated basket.
