How to manage your level of fondue broth?

Do you own a Fondussimo electric fondue set? Given its large 3-liter capacity, you’ll find that you need more broth than with a conventional fondue. Here are our best tips for planning your fondue meal!

How much broth to prepare?

The Fondussimo user manual suggests that you use a minimum of 2.6 liters of broth to ensure that your meal goes smoothly. This works out to about 2 liters for the initial fill, and the remainder to replace the broth that’ll get absorbed by your food during the meal. The ideal amount of broth to prepare is always shown in our Fondussimo recipes!

That being said, planning the perfect quantity of broth depends on a few factors.

Adapt how much broth you prepare based on the number of guests

Will there be 2 or 3 guests at your table? You might be tempted to use less broth, but then the liquid’s height in the Fondussimo pot may be insufficient to fully immerse your dipping ingredients in the baskets.

A fan shared his trick with us to use less broth for dinner parties with fewer guests: Simply fill 1 or 2 cooking baskets with baby potatoes to take up volume in the pot! You’ll then be able to feast on these delicious broth-soaked potatoes at the end of the meal or some other time.

You’ll be 5 or 6 diners at your table? Since a large volume of ingredients will be cooked simultaneously, it is better to use a little less broth fondue in your Fondussimo at the beginning of the meal. But remember to add broth when its level gets low during the meal.

When the ingredients have a say

Do you plan on cooking pasta in fondue, or other absorbent foods, like mushrooms, broccoli or fried tofu? They will soak up a lot of broth!

If you’re enjoying a meal for 2, it won’t have much of an impact, but if you are feeding 4 people or more, you’ll definitely have to prepare a larger quantity of broth, at least double. By precooking your pasta in water (which is not mandatory or necessary), you can reduce the amount of broth required during the meal. Note that your pasta will have a slightly less pronounced taste than if you cook them directly in the broth, as suggested in our Italian Fondue recipe.

Is your broth level dropping quickly during the meal, even though you aren’t cooking absorbent food? You might be boiling the liquid too much, which can speed up the evaporation process. Turn the temperature control knob down a little and add a little water to replace what’s been lost!

Our best advice: be generous
